Since 1831, The Bichot family has been at the forefront of Burgundy wines. Over the course of 6 generations, the house style has become more and more refined and distinct in elegance.With Albéric Bichot at the helm since 1996, the house has focused its future on quality, minimal intervention winemaking and organic farming. The embodiment of this approach resulted in their 6 domaines being fully organically certified since 2018, while receiving praise and awards on the quality of the wines.
One of the great appellations of the Côte de Nuits both in terms of size and reputation, Gevrey-Chambertin is characterised by a wide variety of different terroirs. No white wines are found here, only Pinot Noir is cultivated. The soil in this part of the appellation is composed of brown limestone and yields classy, fine, elegant wines. The vineyard is located at the northern part of the appellation, at the top of the hill where it benefits from optimal exposure and on gently sloping terraces.
Soil – Brown calcic overlying marly bedrock
Grape Variety – 100% Pinot Noir
Vatting – Temperature-controlled conical oak vats. Vatting time: 20 to 28 days
Ageing – In oak barrels 100%. Ageing time: 14 to 16 months. Proportion of new barrels: 15% to 25%
The nose reveals aromas of red fruit, which evolve toward a discrete hint of vanilla and liquorice. Fine and mineral, the palate offers balanced structure and a nice long finish.
Food Pairing – Taste this Gevrey-Chambertin “Les Evocelles” on red meats dishes, small game and fine, classic cheeses.
Serve between 16 and 17°C (60°F – 63°F). This wine is ready to drink or may be laid down for 3 to 5 years or more.
Wine Spectator – 92 points
Candied cherry and spice flavors are backed by a steely structure in this linear red. Builds to a long finish, with intense fruit, spice and mineral accents emerging. Best from 2022 through 2035. (Issue Oct 31, 2018)
