Description

Since 1831, The Bichot family has been at the forefront of Burgundy wines. Over the course of 6 generations, the house style has become more and more refined and distinct in elegance.With Albéric Bichot at the helm since 1996, the house has focused its future on quality, minimal intervention winemaking and organic farming. The embodiment of this approach resulted in their 6 domaines being fully organically certified since 2018, while receiving praise and awards on the quality of the wines.

The Chateau Gris castle was built in the 18th century in the middle of its 3.5 ha (8.6 acre) walled vineyard. After the vines were destroyed by phylloxera, the roof of the castle was covered with grey slate whereas tiles are traditionally used in Burgundy. The people of Nuits-Saint-Georges therefore began to refer to it as Château Gris (“grey castle”) and the name stuck.
In Nuits-Saint-Georges, only 7.3 ha (18 acre) produce white wines, including 4.3 ha (10.6 acre) of Premier Crus. Our 0.67 ha (1.65 acre) vineyard is located on the high terraces of the hill, above the castle.

Soil – Calcareous clay, Parcel size: 0.67 ha (1.65 acres). Situation: Overlooks the town of Nuits-Saint-Georges
Exposure: East, 300m on average. Average age of the vine: 20 years

Grape Variety – 100% Chardonnay

Vatting – Oak barrels (35% new oak), Vatting time: 3 weeks to 2 months

Ageing – In oak barrels 100%, Ageing time: 14 to 18 months. Proportion of new barrels: 35%

The nose develops aromas with predominant floral and mineral nuances along with a hint of toast. On the palate, this wine is very straightforward and round with a distinct mineral base, some nuances of liquorice, and an elegant, discrete woody flavour. Good overall length.

Food pairing – Ideal with fine fish, crustaceans, poultry in sauce and full-flavoured cheeses.

Serve between 10° and 12°C. (50°F – 54°F) – This wine is ready to drink or it may be laid down for 2 to 7 years.

White flowers, generous apple and lemon fruit with floury texture and lovely generous body outlined with precise acid. Such precision and elegance! Sits between Chablis and Meursault in terms of style. Nutty elements on the finish.

Wine Enthusiast – 91 points

There are not many white wines from Nuits-St.-Georges, but this one is rounded, softly textured and full of yellow fruits. Cut with a citrus character, the fruits are sustained by the wood aging. Drink this rich wine from 2023. (September 1, 2021)

Inside Burgundy – 91 points

This is all chardonnay, worth mentioning for a white Nuits-St-Georges as many contain pinot blanc. It is grown in free-standing bush vines, which give low yields, 16 hl/ha in 2019. Pale lime and lemon, rather an elegant version, despite the thickness of texture from the low yield. This is a wine, which will surprise people and it doesn’t conform to usual rules. A little below 14% so not for drinking casually. Energy comes from opposite slopes of the dip, or creux, which forms this vineyard, officially called Les Crots.
