Description
Jean-Bernard Chauvin comes from a family of winemakers who first came to St Lambert du Lattay in the 1920s. Passionate about the vine and wine, he became head of the estate in 1984 with his wife Catherine. Today, Denis, their son, has joined them in this adventure, continuing the line of family winemakers.
The care of the vineyards has always been the priority, and for this reason the Domaine de Clayou joined the “Terra Vitis” network of vignerons who work their land in a sustainable and environmentally sensitive way.
Soil – 35 hectares on chalky-clay soils
Grape Variety – 100% Chenin Blanc, Noble Late Harvest – Botrytis
Winemaking – From healthy and ripe grapes on Noble rot, the manual and successive sorting harvest begins in the second week of September towards a delicate winemaking process: Transfer of the harvest by belt to the pneumatic press, slow pressing (4 hours) then slight settling of the must. Fermentation in vats, only with indigenous yeasts and under temperature control for 8 to 10 weeks (no malolactic fermentation allowed) – Racking then maturing on fine lees until tangential filtration in March, and bottled the following year.
On the nose, this wine unravels an aromatic universe composed of ripe white fruits, apricot notes, and white flowers. On the palate, it offers a great balance between sugar and good acidity, aromas of white flowers and white fruits while delivering a ravishing and generous experience.
To be enjoyed as an aperitif, it goes perfectly with foie gras, blue cheeses and fruit tarts (pears, apricots, Tatin).
